Curried Walnut Grain Burgers

If you can’t eat meat or just don’t want to, this is a great alternative. It’s become one of our favorite veggie burgers. If you don’t feel like heating up the grill, pull out your foreman grill! This is a modified recipe from TLC Cooking. I’ve added egg substitute, fat free yogurt and brown rice to make it more healthy. I also made my patties smaller, giving you 6 patties.

1/2 Cup Egg Substitute=2
1/3 Cup Plain Fat Free Yogurt=1
2 tsp of Worcestershire sauce=0
2 tsp of Curry Powder=0
1/2 tsp of salt=0
1/4 tsp ground red pepper=0
1 1/3 cup brown rice=5
1/2 cup finely chopped walnuts=10.5
1/2 cup finely chopped carrots=0
1/2 cup minced green onions=0
1/3 cup plain bread crumbs=4

Combine eggs, yogurt, Worcestershire sauce, curry, salt and red pepper in a large bowl, mix until blended. Stir in rice, walnuts, carrot, green onions and bread crumbs. Shape into 6 patties. Cook on grill, skillet or foreman grill until browned on both sides.

Servings=6
Points per serving=3.75
Add additional points for cheese and or bun.
