Mexican Lasagna

Here’s a spin on lasagna to satisfy your mexican tastebuds!

2 Cups of Trader Joe’s Frozen Mixed Peppers=0
1 TB Cumin=0
1 TB Lime Juice=0
1/8 Tsp Cayenne=0
1 Cup Chicken Broth=0
4 servings (3 oz each) of Target brand boneless, skinless chicken breasts=12
2 Tsp Flour=2
2 TB Fat Free Cream Cheese=2
12 Corn Tortillas=12
2 cups of Fat Free Refried Beans=4

Defrost peppers and mix with cumin, lime juice and cayenne. Put mix in medium sauce pan. Cut up chicken into small pieces and place into sauce pan. Once chicken is cooked, scoop out some of the broth into a small bowl and wisk with 1 tsp flour. Place liquid back into pot and repeat again with another 1 tsp of flour. Then add the cream cheese and reduce to low. Place 6 corn tortillas in a 9×13 pan (that has been sprayed with cooking spray). Scoop 2 cups of the sauce mixture over tortillas. Layer another 6 tortillas on top and pour remaining sauce on top. Cover with foil and cook in oven at 375 for 40 minutes. Cut into 8 servings. Top each serving with 1/4 cup of the refried beans. For additional points, top with Fat Free Cheddar Cheese or Fat Free Sour Cream.
