Pecan Pie Cookies

Will and I are mentors in the Big Brothers Big Sisters program and every year we make Christmas cookies with our Little Brother. His favorite cookie recipe is the recipe below from Land O’Lakes. When we first started making these cookies with him he couldn’t even reach the mixer on the counter, now he runs the show and tells Will and I when and what to add. It’s become a very special tradition for us during the holidays. These are very rich and so delicious! Watch the video and at the end Stella hams it up when we talk about tasting the cookies!

Recipe by Land O’Lakes
Ingredients

1 ½ cup Brown Sugar, divided (firmly packed)
¾ cup Land O’ Lakes Butter (softened)
1 Egg
2 tsp Vanilla, divided
2 cups Flour
1 tsp baking powder
1 cup Pecans (chopped)
¼ cup Land O’ Lakes Gourmet Heavy Whipping Cream

Directions

Preheat oven to 350.

In a large bowl, cream 1 cup of brown sugar and butter. Add egg and 1 tsp of vanilla. Combine flour and baking powder and add to sugar mixture.

Shape dough into 1 ¼ inch balls. Place two inches apart on ungreased cookie sheets. Make an indentation into the cookie with your thumb.

Combine ½ cup brown sugar, 1 tsp of vanilla, pecans, and heavy cream. Fill each cookie’s indentation with 1 tsp of pecan mixture.

Bake for 8 minutes at 350.
