Dynamic Sushi Duo

This was somthing that “wowed” the judges on the TCL Kitchen Star panel. I was told after the show from two of the judges that I hit it out of the park that day with this one. I used to try and trade my lunches when I was a kid. My mom used to pack me Miracle Whip and Peanut Butter sandwiches-no, I am not kidding. Needless to say, no one EVER wanted to trade. I came up with the recipe because it makes lunch fun, sneaks in healthy ingredients and then ends the meal with a treat-which all kids love. My niece and nephew left me a voicemail after the show and said, “When are you making us lunch??”

Tuesday’s Kitchen Star Results

Sandwich “Sushi”
Ingredients
5 oz Cub Brand Chicken Breast
4 slices of Healthy White Bread
4 TB of Cub Brand Extra Crunchy Peanut Butter
¼ cucumber-deseeded and sliced thin
1 carrot-peeled and sliced thin

Dipping Sauce: Asian Toasted Sesame Dressing

Directions
Grill chicken and dice into small pieces. Set aside.
Using a rolling pin, roll each bread slice until completely flat. Spread 1 Tablespoon of Peanut Butter on each slice of bread. At the edge of each slice of bread put chicken, cucumber and carrot. Slowly roll bread into a roll and slice into 4 “sushi” pieces. Serve with Sesame Dressing as a dipping sauce.

Dessert “Sushi”
Ingredients
3 TB of Cub Brand Butter
4 Cups of Cub Brand Mini Marshmallows
6 Cups of Rice Krispies
1 Bag of Gummi Worms
1 Box of Fruit by the Foot

Directions
Melt Butter in a large stockpot. Once butter has melted, add marshmallows and stir until completely melted. Add Rice Krispies and stir completely until cereal is completely mixed. Spread mixture on a greased cookie sheet. Line gummi worms 2 at a time across the edge of the mixture. Roll mixture once over gummi worms and cut log away from rest of mixture with a knife. Cut the log into 2 inch wide pieces. Wrap Fruit by the Foot over each piece.
