My husband loves chips and salsa-maybe even a little too much. Sadly for me, he is in love with Lisa…Salsa Lisa that is! He says he likes my salsa the best, but he’s always quick to scoop up her salsa when he’s at the store. He tried this recipe recently and I think I may have one up on Lisa. In the spirit of spring and the upcoming BBQ season, this is a new take on salsa that is great on chips but also wonderful on fish, steak or chicken!
2 Ripe Mangos (Mangos that are ripe get a yellowish/red hue and are soft)
1 can of diced Pineapple
1 tsp of diced Jalapenos (more or less depending on your spice tolerance)
1/2 cup of chopped Cilantro
1 tsp of Cumin
Dice Mango and mix with pineapple, jalapenos, cilantro and cumin. Store in refridgerator and serve with chips or on top of fish, steak, chicken or as an ingredient in tacos.
