If I had to pick one side dish favorite for the holidays or family gatherings, it would be a tie between oven roasted brussels sprouts and my cheesy cornflake potato casserole. It’s saying something that these tiny baby cabbages can compete with one of the holiday’s most treasured pans of potluck goodness.

What makes these brussels sprouts so amazing?

These brussels sprouts are roasted in bacon grease and then tossed with big chunks of thick-cut bacon. This side dish is then finished off with crumbled queso fresco cheese and drizzled with balsamic glaze.

Start with thick-cut Bacon! My trick for making the best bacon is to put the bacon in a jelly roll pan and broil it!

While the bacon is cooking, get your fresh brussels sprouts ready!

When the bacon is done, remove the bacon and set is to the side. Don’t get rid of the bacon grease!

We are adding the brussels sprouts to the bacon grease! Chop up that bacon and add that back to the brussels sprouts!

Back to the oven to get crispy brussels sprouts!

Ingredients

  • 16 oz Bacon (I like Hormel Black Label Thick-cut Bacon)
  • 2 lbs Fresh Brussels Sprouts
  • Garnish (optional): Premium Balsamic Glaze and 3/4 cup Queso Fresco Cheese

Instructions

  1. Preheat oven to Broil.
  2. On a jelly roll pan, lay out the slices of bacon. Broil for 15 minutes.
  3. While the bacon cooks, trim any brown pieces from the end of the brussels sprouts and slice each sprout in half.
  4. When the bacon is finished cooking, remove the pieces from the pan and add the brussels sprouts. Chop the bacon and combine with brussels sprouts.
  5. Turn the oven to Bake at 400 degrees.
  6. Bake for 20-25 minutes (if you like a firmer brussels sprout go with 20 minutes, for a softer vegetable, cook for 25).
  7. I like to serve these right out of the oven. For garnish, I like to add 3/4 cup of Queso Fresco cheese and drizzle the sprouts with Balsamic Glaze.
