Muesli Mini Meatloaves

I recently had the chance to try Seven Sunday’s Muesli.  What’s Muesli, you ask? I had the same question! Museli is a mix of grains, nuts, seeds and dried fruits.  This popular breakfast dish from around the world is now being brought to you by Hannah, a Minnesota mom who wants you to be able to enjoy a yummy “Sunday” breakfast seven days a week!

One of the first things I noticed about this product is the ingredient list-real food, real names, pure goodness.  I tried the Vanilla Cherry Pecan Muesli and loved the giant pieces of cherry.  Our family tried it a few ways (dry and as finger food for baby Wes), Swiss Soak (overnight soak with Yogurt) and my favorite way was incorporating it into my mini meatloaves!

This recipe is so simple but so flavorful!  I used the Vanilla Cherry Pecan Muesli as the binder in the meatloaf.  These meatloaves are sweet and savory.  When I made them I left them on the counter to cool and my husband came home and ate 3 as a snack they were so good!  Perfect for kids and adults alike, this is a great recipe to make when we get a break in the heat and can turn on the oven and have meals ready for the week!

Ingredients:
1.25 lb Ground Turkey
½ tsp Salt
½ tsp Ground Cinnamon
1 egg
1 cup Seven Sundays Everyday Muesli-Vanilla Cherry Pecan
Cherry Jam for topping

Directions:
Preheat oven to 375

In a medium-sized bowl, combine ground turkey, salt, cinnamon and egg. Once combined, add Seven Sundays Muesli to mix.  Divide mixture into a 12-cup muffin tin that has been greased.  Bake for 20 minutes.

Once meatloaves have cooked, top with cherry jam.

Makes 12 mini meatloaves
