Asparagus and Salmon Quiche

I love Sunday mornings. Some people love Friday nights, I am a Sunday gal. I’m also a morning person, which seems to be a rare breed these days. I’m Minnesota-raised so I love breakfast for dinner, but I also love it for, well, breakfast.

I make a lot of pies in my house and love making savory pies like quiche. I’m big on creating recipes based on things I have in my house. This week I had smoked salmon and Gouda cheese. This was so tasty, one piece didn’t just seem like enough.

Ingredients
1 Refridgerated Pie Crust
3 eggs (beaten)
3/4 cup Heavy Cream
3/4 cup Skim Milk
1/2 tsp Garlic Salt
1/2 tsp White Pepper
1/2 cup Chives
1 cup Smoked Salmon, seasoned with 1 tsp salt
8 Asparagus spears
1/2 cup shredded Gouda (buy block and shred yourself)

Directions
Prebake crust according to package directions. Set aside.

In a bowl, combine eggs, cream, milk, salt, pepper and chives. Chill in fridge for 30 minutes.

Pour 1/3 of mix into crust and bake for 13 minutes at 375. Pour 1/2 of remaining egg mixture on top, then add salmon and arrange asparagus like spokes on pie. Pour last of egg mixture on top. Sprinkle with cheese and let bake for 30 minutes.
