2 Cups of steamed and halved brussel sprouts=0
1 cup chopped and seeded tomato (1 large)=0
2 medium bell peppers=0
2 Tb of chopped red onion=0
1 Cup of cooked chopped beets=0
1/4 cup of dry diced sundried tomatoes=2
2 Tb Olive Oil=8
2 Tb White Vinegar=0
1 ounce Goat Cheese=2
2 cloves of minced garlic=0
1/2 tsp marjoram leaves chopped=0
1/8 tsp ground thyme=0
1/4 cup Grated Parmesan=3
Cook Gnocchi according to directions. Drain and cool, set aside. Mix all vegetables and cooled Gnocchi. Set aside in refridgerator until ready to eat.
Mix all ingredients for the dressing and leave in refridgerator until ready to eat.
When ready to eat, mix vegetables and dressing and top with parmesan.
