Chicken Patties

When I saw the invitation to enter the Saucy Mama’s Skinny Mama Cooking with Mustard contest, I thought it was ironic since about the last thing I feel right now is skinny.  I’m almost 5 months pregnant with my 2nd baby and this mama seems to be getting bigger by the day!  But I wanted to enter the contest because I think I do have some weight loss insight to share.
Many people don’t know this, but my blog, Dining with Alice started because I was making healthy recipes and my family and friends wanted copies and with all the cooking I was doing I didn’t want to bombard them with multiple emails a week so Dining with Alice was born.  These recipes came about after I started participating in Weight Watchers.  Weight Watchers helped me lose 50 lbs. and I became a Weight Watchers Lifetime member.  My blog has evolved to become a place filled with both healthy and hearty recipes; I believe you have to have both in life.
For the Saucy Mama contest I wanted to create something simple and yet still give you the feeling of comfort food.   If you have a chance look in the frozen aisle and look at the ingredient list of frozen chicken patties or nuggets.  I counted last time I was at the store and some patties have over 40 ingredients-many of which I have no idea what they are.  This recipe has 3 ingredients (yes, you read that right).  I was very excited about using Saucy Mama’s Champagne Honey Mustard-doesn’t it just sound yummy and fancy? The mustard is so delicious its flavor is so wonderful you don’t need any other salt or seasoning.  The recipe is easy to prepare and easy to make on a weeknight.  I am true to my words and in fact made this last night after working all day and made it for my husband, toddler and my mother.  I set out several different types of toppings and everyone could make their own sandwich.  They all thought the patties were delicious and moist and had no idea it was actually healthy!

Champagne Honey Mustard Chicken Patties
54 All-Bran Multi-Grain Crackers
3 Chicken Breasts (6 ounces each)
1/3 cup Saucy Mama Champagne Honey Mustard
Preheat oven to 375.
In a food processor, blend crackers, remove from processor and set aside.  Add chicken to food processor and blend until finely chopped and add mustard.  Pulse until combined and then add in the cracker crumbs and stir by hand.
On a greased cookie sheet, form six patties and bake for 15 minutes.
Makes 6 patties
