Creative Cold Lunches: Kebabs

One of the key components of my Creative Cold Lunch series is that preparing the lunch has to be easy.  The last posts have been very simple-just cook and combine.  This week is even easier.  I recently picked up some Tyson Grilled & Ready Chicken Breast Chunks and decided to make kebabs. One thing that I liked about this Tyson product is that the chicken is fully cooked-and it’s not just plain cooked chicken, it actually has a smoky grill smell and flavor.  Here in Minnesota last week we had several days where the temperature didn’t get above zero, yes you read that right.  So it was so nice to enjoy some grilled food with no effort and especially the fact that I didn’t have to step outside and start the grill!

So here’s what I did with the chicken: it is frozen so I let it defrost in the fridge.  I took out my food scale and divided the portion sizes (3 ounces=120 calories) and then put the chicken on skewers and bagged them up.  I served it through the week with hummus and salads (one of them pictured above with blueberries, mixed greens and poppy dressing).  There’s so many other options for chicken kebabs: add mozzarella, tomatoes and basil, stack with prepared pieces of waffles or skewer with avocado, tomato and bacon -just to name a few.
