When Vegas.com contacted me and asked if I would create a really fun cocktail drink inspired by their For the Love of cocktails event, a 72-hour fundraiser that raises money for breast cancer research. I knew exactly what I wanted to make. Yes, a Unicorn drink martini.
Coming off of the wave of the unicorn frappuccino, I thought it would be fun to create an adult cocktail. This isn’t an everyday sipper, this is a celebration drink. The Unicorn drink martini is a super fun drink to make for a birthday celebration, girls weekend or bachelorette party.
I was giddy making these Unicorn martini drinks.
The kids were asleep and my husband was snoozing away on the couch.
It’s a real party up in here, folks.
But there I was in my kitchen, pajamas and a messy bun, shaking my martini shaker admiring that beautiful ting noise as the ice hits the top and the bottom of the shaker. Eating bites of cotton candy and sorting marshmallows from the Lucky Charms cereal box. Nothing to see here, kids. Just consuming mass amounts of candy while you sleep.
I thought it would be fun to try and create a pink tropical drink. My mother-in-law recently introduced me to Rum Chata. Listen to the wise women in your life, ladies. Seriously. This is my new favorite drink and I knew it would be perfect for the unicorn drink martini.
After I pour the drink in the martini glasses, I put just a bit of Cool Whip on each martini. Not only is Cool Whip deliciously creamy on top of my Unicorn drink martini, it serves an important purpose, it is the pillow to hold the candies and to keep the cotton candy from melting into your drink.
And the candies are super important to this drink. It’s like when you get a Bloody Mary and it comes with an appetizer of cheese and meats.
I showed a picture of the drink to my husband and in his most supportive husband of a blogger voice, says, “Who on Earth would eat all that candy?”
I’ll drink yours.
Seriously, this girl loves candy.

There are so many reasons you may need a delivery–you are prepping for a party and you forgot a key ingredient for a cocktail or maybe you just want to stay cozy on your couch and you need your favorite craft beer. Recently, I sent one of my best friends a Rum and Coke package for her birthday via Drizly and she loved it!
- 2 ounces Rum Chata
- 2 ounces Bacardi Mango Fusion Rum
- 3 ounces Pomegranate Juice
- ½ cup Cool Whip
- Cotton Candy
- Lucky Charms Marshmallows
- In a martini shaker, combine 4-5 ice cubes, Rum Chata, Mango Rum, and Pomegranate Juice. Pour drink into martini glasses. Spread the Cool Whip on the surface of the martini (this will keep the cotton candy from melting) and then garnish with cotton candy, candies, and marshmallows. You can also serve the drink without Cool Whip and the candies. Simply pour the drink into martini glasses and serve.
