I’m not sure how many donuts I ate over the weekend.
I literally lost count.
There was also more than one Rhubarb dessert consumed.
And a few craft beers. Okay maybe more than a few beers.
It was a glorious long weekend.
But time to get back on track and find some balance. When I need to press reset after some solid eating and drinking, I’ll pick up the Whole 30 or Paleo diet for a few days or even just during the work week. One of my favorite staples to enjoy are roasted sweet potatoes. They make really great buns when you are trying to cut carbs.
In the morning, I love having a substantive breakfast (my husband says that technically I eat two breakfasts). But one thing is certain I love breakfast sandwiches and a Whole 30 breakfast sandwich is a great choice for something flavorful if you are following Paleo or Whole 30.
One of my tips when you are trying to follow something as diet-detailed as Whole 30 or Paleo is plan and get yourself organized. As with any organized meal planning, you need to be thoughtful about what you are making but when you have significant restrictions, it does take some creativity. So plan ahead, make big batches of things you like (for me, I make tons of sweet potatoes, grilled chicken and even fully cooked poached and hard-boiled eggs). I also look for creative inspiration on social media, you can follow me on Pinterest and Instagram. This Whole 30 Breakfast Sandwich is adorned with sweet potato buns and then stuffed with a poached egg and I take one of my already cooked chicken breasts and toss with orange juice and zest, simple right? Ingredients
- 2 Sweet Potato Bun Pieces-see Dining with Alice for recipe: http://diningwithalice.com/healthy/sweet-potato-buns/
- 1.5 ounces Chicken (cooked, pulled)
- 1 TB Orange Juice
- 1 tsp Orange Zest
- 1 Poached, Hard-Boiled or Fried Egg
Instructions
- Mix cooked chicken with orange juice and zest.
- Arrange sweet potato bun and top with pulled chicken and cooked egg.
