I found it really hard to get motivated to make a New Year’s resolution this year. I was asleep by 9pm on New Year’s Eve. Well, that my friends is my problem these days, I have a 3-year-old and a 5-month-old that don’t really sleep. So I was jokingly telling people that my New Year’s resolution was to get some sleep. But truthfully, not much can be accomplished without sleep. Eventually my children and my husband and I by default will sleep, so I guess it is a reasonable resolution, that maybe can be accomplished, right? Please, say right!
In addition to sleeping I do need to make a conscious effort to do some meal planning these days. My husband and I both bring our lunches to work every day and I need something that can be put together fast, can be shuffled around in my lunch bag, is yummy and is creative, because I can’t bear to eat a packaged microwave meal or plain turkey sandwich. So I decided in addition to getting some sleep this year, I’m starting a new section on my blog devoted to creative cold lunches.
Today’s first installment is one of my favorite cold lunches. Instead of mayo in the egg salad I use hummus. The meal is bursting with Omega 3 fatty acids, amino acids and high-quality protein. Enjoy!
Hummus Egg Salad Sandwiches
Ingredients:
4 eggs (hard boiled, cooled)
1/2 cup Hummus
1 tsp Mustard (I like Saucy Mama’s Smoky Garlic)
1/4 tsp Salt
Directions:
Dice up the hard boiled eggs and mix with hummus, mustard and salt.
Garnish with Sunflower Seeds and a pinch of Smoked Paprika
Serve with sliced peppers on a toasted english muffin.
Makes 3 servings
