White Chocolate Cranberry Cookies
Serves: 3 dozen
  • 2 ½ Cups Flour
  • ½ tsp Baking Powder
  • 2 sticks Land O’Lakes Butter (Salted)
  • ½ Cup Granulated Sugar, plus ¼ cup sugar for rolling
  • 2 tsp Vanilla Bean Paste or Vanilla Extract
  • Zest from 2 lemons
  • 2 tsp Lemon Juice
  • 1 Egg
  • 6 ounces Dried Cranberries, chopped (I like the Cherry ones)
  • Garnish: 5 ounces melted white chocolate (I like to use Ghirardelli White Melting Wafers)
  1. Preheat oven to 350.
  2. Mix flour and baking powder together and set aside.
  3. Cream Land O’Lakes butter, ½ cup of sugar, vanilla, zest from 2 lemons and 2 tsp lemon juice.
  4. Add egg and mix. Gradually add in flour mixture and mix until combined. Add in chopped cranberries and mix.
  5. Form dough into two long rolls and slice into 36 total pieces. Roll each piece into a ball and roll in sugar.
  6. Arrange a dozen cookie balls on a cookie sheet lined with parchment paper. Press down each cookie ball.
  7. Bake for 15 minutes or until edges of cookies start to brown.
  8. Once cooled, dip half of cookie in melted white chocolate.
