Sweet Potato Bun Breakfast Sandwich

Just 3 ingredients and 30 minutes in the oven for Sweet Potato Buns. A perfect substitute for bread especially those on Whole 30 diets. This was a recipe included in my Healthy Breakfast segment for Twin Cities Live on January 20, 2015.

Sometimes bread and I need to go on a break.

Just like high school dating. You bad boy bread, I know you are so bad for me but I just can’t resist.

And I know we will always get back together.

However, we do need some time apart. Sometimes it’s after the Minnesota State Fair. Sometimes it’s after the holidays when I think a dinner roll is a new food group. Or just when I really need start wearing pants that don’t have an elastic waistband.

A super easy way to actually feel like you are having a sandwich, well,when you aren’t, is to make sweet potato buns.

When you are shopping for sweet potatoes look for big, round and fat don’t get the skinny scrawny ones. You know I’m all about the bass.

Sweet Potato Buns

Why yes, I totally use my sewing measuring tape to measure food. Someone told me you can measure with your thumb but my thumb looks like a child’s. Seriously crazy weird thumbs here.  Hence, the tape measure. So once you wash your sweet potatoes and remove the bottoms, line them up and slice into one inch pieces.

There’s no need to take the skin off the sweet potato buns.  Seriously, ain’t nobody got time for that. Taking all that skin off totally trashes good nutrition and strips away valuable texture that you need. Trust me, when you aren’t eating bread, you want taste and texture.

Ok get those sweet potato buns cut and then pair them up so you can make sure you have enough for sandwich buns. Depending on how fat and long your sweet potatoes are will determine how many sweet potato buns you can get.

Sweet Potato Bun Slices

Now throw these ladies in a bowl, toss with salt and melted coconut oil. Let them hit the oven and you’re ready to stuff your sweet potato buns. And now my sweet potato buns can return to non elastic waistband pants.

Ingredients
  • 3 lbs sweet potatoes (large and round)
  • ½ cup Coconut Oil (melted)
  • 1 tsp salt
Instructions
  1. Preheat oven to 400.
  2. Wash sweet potatoes and cut into one inch slices (leave skin on).
  3. Toss with coconut oil and salt.
  4. Bake for 30 minutes.
  5. Stuff sweet potato buns with favorite ingredients like sandwich meat, burgers, pulled pork or eggs.

  1. These look absolutely fantastic! Nellie wasn’t in as much awe as I was (apparently she’s seen this genius trick before), but I was totally impressed that you thought to do this!!! Geez.

    • Thanks! This is such a popular trick when avoiding buns! I love them as a substitute for breakfast sandwiches. I love my breakfast sandwiches! I think they are perfect for sliders too! Or just for dipping in ketchup!
