Steak Pillows

Before Stella arrived, Will and I would spend New Year’s Eve in an ice house in Northern Minnesota. We’d spend the night ice fishing and always have steak and potatoes on the grill for dinner. I wanted to create an easy recipe that would put a new spin on steak and potatoes and give it a gourmet look. This is such an easy recipe and has such a beautiful presentation. I served mine with roasted red potatoes tossed with green onions and pomegrante seeds. This is a great dinner if you are looking for a romantic dinner to make at home.

Ingredients
13.8 ounce can of Pillsbury Pizza Crust
½ lb Top Sirloin Boneless Steaks
½ tsp Salt
½ tsp Ground Pepper
¼ cup Dried Cherries
5.2 ounce package Boursin Garlic and Fine Herbs Cheese
10 ounce box Frozen Spinach (defrosted and drained)
1 Egg White (beaten)

Directions
Preheat oven to 425 and preheat a Foreman Grill.

Open pizza crust dough and divide into 8 equal slices. Spray 4 of the muffin cups of a 12 cup muffin tin with non-stick spray. Spread 1 piece of dough in each of these muffin cups and press up the sides. Bake for 7 minutes and then set aside.

Divide steak into four equal portions and sprinkle salt and pepper over evenly over steaks. Grill steaks on a Foreman Grill coated in non-stick spray for 1 minute 30 seconds (this will give you a final steak temperature of medium well).

In each baked crust, place 1 TB of dried cherries, then steak, 2 TB of cheese and 2 TB of Spinach. Place a piece of dough on top of each, sealing sides. Brush the top of each pillow with egg white. Bake for 10 minutes.

Let rest a few minutes before serving.

Serve each pillow on top of remaining spinach.
