Ice Cream Treats

As a child I would bolt out of the house as soon as I heard the ice cream truck bell ringing and was quick to pick out the brightest bubblegum laden treat. Now almost 2, my daughter Stella is too young to know about the ice cream man but she knows she has an “ice cream mom” who makes delicious summer treats! Last summer we took Stella across the country with her Nana, Grandad and Auntie Mimi to the Ben and Jerry’s factory in Vermont for her first ice cream treat and the girl was in love.

When Twin Cities Live gave me a challenge to come up with ice cream treats that are low calorie/low fat, I loved the idea and thought it would be a great one for moms too since we love giving our kids things we can feel good about! I also like making things simple and easy so not only are you getting an ice cream treat that you don’t feel guilty about eating or giving to your children, they are super simple to make!

While a bomb pop is traditionally low in calories and fat, my version offers you a treat with natural ingredients and colors. My Cherry Chocolate Fro Yo is a knock off of Ben and Jerry’s Cherry Garcia (my personal ice cream of choice). In case you don’t know “Fro Yo” is short for frozen yogurt (my nephew PJ recently taught me this terminology). I knocked about 60 calories off the original version. The last treat is something new I came up with, I wanted to pay homage to the MN State Fair and make something “on a stick” so I made dirt cake on a stick! Some versions of dirt cake can run upwards of 800 calories per serving! With my recipe you get all the same delicious flavors all under 200 calories!

Easy Bomb Pop

Ingredients:
1 Cherry (stem removed)
4 ounces of Simply Lemonade with Raspberry

Directions:
Place cherry in bottom of a Rocket Pop Mold. Pour lemonade into mold, secure handle and let freeze overnight.

Makes 1 serving

Cherry Chocolate Fro Yo

Ingredients:
1 Chobani Yogurt-Black Cherry flavor (6 ounces)
8 pieces of Ghirardelli 60% Cacao Bittersweet Chocolate Chips

Directions:
In a medium sized ramekin, pour in yogurt and mix until fruit from the bottom is combined. Break up each chocolate piece and add to yogurt. Freeze for 45 minutes or until desired consistency.

Makes 1 serving

Dirt Cake on a Stick

Ingredients:
3/4 cup of Kemps Chocolate Frozen Yogurt-Fat Free
2 Newman’s Own Chocolate Sandwich Cookies (crushed)
¼ cup Skim Milk
2 TB Chocolate Pudding, divided
2 Gummi Worms, divided

Directions:
In a medium bowl, mix frozen yogurt, crushed cookies and skim milk. Once combined add to a Volcano Fillable Ice Pop mold, secure handle and let freeze overnight. Once frozen, remove pop from mold, in the volcano hole, fill each pop with 1 TB of pudding and 1 gummi worm.

Makes 2 servings
