Egg Muffins with Crystal Farms Scrambled Eggs

Pizza Egg Muffins

 

Crystal Farms has launched 3 new products to help you create yummy “weekend” breakfast any day.  I worked with Crystal Farms and Twin Cities Live on a recent segment to give viewers breakfast ideas using these time-saving product.  You can watch the March 29, 2013 segment here.  We also made Classic French Toast and you can find that recipe here.

For the segment, we made 5 Ingredient Egg Muffins and used the Crystal Farms Scrambled Eggs -it has eggs and buttermilk.  This is a simple recipe and a great one to involve your kids.  You can freeze these muffins and just reheat.  Our house is divided on which one is the best, I say Chicken Bacon Ranch and Will says Pizza, all that matters to me is that Stella said after eating one, “Mom, you are a good cooker!”

Chicken Bacon Ranch Egg Muffins

Bacon, Chicken, Ranch Egg Muffins

Ingredients:

2 cups Chicken (cooked, chopped)

½ cup Broccoli (cooked, chopped)

½ cup Bacon (cooked, chopped)

1 TB Dry Ranch Dressing

2 cups Crystal Farms Scrambled Eggs

Directions:

Preheat oven to 375.

Mix together chicken, broccoli, bacon and ranch mix.  Grease a 12 cup muffin tin with nonstick spray.  Place chicken mixture evenly into 12 cups.  Pour Crystal Farms Scrambled Eggs over each cup until covered.  Bake in the oven for 20 minutes.

Serves 6 (2 muffins each)

 

Pizza Egg Muffins

Ingredients:

¾ cup Pepperoni (chopped)

¾ cup Mozzarella (cubed)

¼ cup Sun Dried Tomatoes (thinly sliced)

1 tsp Pizza or Italian Seasoning

2 cups Crystal Farms Scrambled Eggs

Directions:

Preheat oven to 375.

Mix together pepperoni, mozzarella, tomatoes and seasoning.  Grease a 12 cup muffin tin with nonstick spray.  Place pepperoni mixture evenly into 12 cups.  Pour Crystal Farms Scrambled Eggs over each cup until covered.  Bake in the oven for 20 minutes.

Serves 6 (2 muffins each)
