Stuffed Peppers and Tomatoes with Prego Homestyle Alfredo

DSC_0914 When I was growing up, I remember pasta night as a staple in our family’s house.  My mom worked full-time, was a single mom and had three kids to feed fast.  Spaghetti with Prego was on the menu at least once a week.  As a mom myself now, I understand the importance of ease and speed when it comes to making dinner for my family.  Recently I was asked if I would like to try Prego’s new line of sauces.  The line includes three new Alfredo sauces: Prego Homestyle Alfredo, Prego flavored with Savory Bacon and Prego Artisan Three Cheese.  After trying these delicious sauces I thought it would be fun to give you some alternatives to spaghetti and tomato sauce and give you some tasty recipes that are great for summer.

Here are my other Prego Recipes:

Ingredients:
1 lb Orzo Pasta
Prego Homestyle Alfredo (14.5 ounce jar)
1 cup  Frozen Spinach (defrosted)
½ cup Fresh Basil
5 Chicken Sausages (fully cooked)
3 Green Peppers (large)
2 Tomatoes (large)
1 cup Mozzarella Cheese (shredded)
Directions:
Preheat oven to 375.

Cook pasta according to package directions, strain and set aside in large mixing bowl.  In a blender, combine Prego Homestyle Alfredo, spinach and basil pulse until spinach is finely chopped.  Add to pasta.  In blender, crumble the sausage and add to past mixture.  Cut peppers and tomatoes in half and fill with pasta mixture.   Sprinkle mozzarella cheese on top of each stuffed veggie.
Bake for 30 minutes or until cheese starts to brown.

Makes 10 veggie halves.
