Sweet Potato Buns

Serves: 4
- 3 lbs sweet potatoes (large and round)
- ½ cup Coconut Oil (melted)
- 1 tsp salt
- Preheat oven to 400.
- Wash sweet potatoes and cut into one inch slices (leave skin on).
- Toss with coconut oil and salt.
- Bake for 30 minutes.
- Stuff sweet potato buns with favorite ingredients like sandwich meat, burgers, pulled pork or eggs.
