Looking for some new ideas for your kids lunches? Here are some fun recipes I made for Twin Cities Live to help you think outside the lunchbox!

Apple Sausage Cupakes with Maple Cream Cheese Frosting (Left) and Corn Dog Cupcakes (Right)


Corn Dog Cupcakes
Ingredients:

1 box Jiffy Corn Muffin Mix

1 Egg

1/3 cup Milk

1 cup Cheddar Cheese (shredded)

4 Cheddar Brats (cubed)

Directions:

Preheat oven to 400 degrees.

In a mixing bowl, combine muffin mix, egg and milk.  Once combined, add cheese and brat pieces.

Line cupcake tin with 8 liners and fill liners with mixture.

Bake for 15 minutes. 

Makes 8 cupcakes.

Apple Sausage Cupcakes with Maple Cream Cheese Frosting
Ingredients:

1 box Jiffy Corn Muffin Mix

1 Egg

1/3 cup Milk

1 cup Jimmy Dean Turkey Sausage Crumbles

1 Honey Crisp Apple (cubed)

8 ounces Cream Cheese (softened)

½ cup Maple Syrup

Directions:

Preheat oven to 400 degrees.

In a mixing bowl, combine muffin mix, egg and milk.  Once combined, add sausage and apple pieces.

Line cupcake tin with 10 liners and fill liners with mixture.

Bake for 15 minutes. 

Mix cream cheese with maple syrup and frost cupcakes.

Makes 10 cupcakes.

Strawberry-Banana Sushi
Strawberry-Banana Sushi
Ingredients:

2 slices Wheat Bread

2 TB Maple Cream Cheese Spread (see note below)

1 Banana (julienne-cut)

2 Strawberries (julienne-cut)

Directions:

To make Maple Cream Cheese Spread, combine 8 ounces of softened cream cheese and ½ cup of maple syrup.

Roll slices of bread flat.  Spread 1 TB of maple cream cheese spread on each slice of bread.  On top-side of each slice of bread add ½ julienned banana and 1 julienned strawberry.  Roll bread and then slice each roll into 3 pieces.

Makes 6 pieces.

PB & Chicken Sushi

PB & Chicken Sushi
Ingredients:

2 slices Wheat Bread

2 TB Chunky Peanut Butter

2 TB Chicken (cooked, chopped)

2 TB Carrots (julienne-cut)

2 TB Cucumbers (julienne-cut, seeded)

Directions:

Roll slices of bread flat.  Spread 1 TB of peanut butter on each slice of bread.  On top-side of each slice of bread add 1 TB chicken, 1 TB julienned carrot and 1 TB julienned cucumber.  Roll bread and then slice each roll into 3 pieces.

Serve with Asian Toasted Sesame Dressing

Makes 6 pieces.
